Stuffed Baked Potato Recipe

To prepare this Moldovan baked stuffed potato recipe, select large, round potatoes. Wash them thoroughly, prick them in several places, and bake in the oven until tender, being careful not to burst them.

When the baked potato has cooled slightly, cut off the top (cap) and scoop out the flesh with a spoon. Pour a teaspoon of sauce into the potato and carefully crack an egg, being careful not to break the yolk.

Next, fill the potatoes with the sauce, sprinkle with grated cheese, and drizzle with melted butter. Place the stuffed potatoes on a baking sheet and bake in an oven preheated to 200 degrees Celsius (400 degrees Fahrenheit) for 15-20 minutes. If desired, drizzle the stuffed baked potatoes with tomato sauce when serving.

To prepare the sauce, peel the onion, parsley, and celery, chop finely, and lightly sauté in butter. In a separate pan, lightly fry the flour with a little butter.

Pour the fried flour over the roots, add the broth, stir, and simmer for 1 hour. Strain the finished sauce, season with citric acid or lemon juice, add sugar, pepper, salt, and 1 teaspoon of butter, and bring to a boil.
