
Ingredients:
6 glasses of water,
½ chicken,
400 g fresh mushrooms,
1 carrot,
½ parsley root,
1 onion,
2 tablespoons butter,
2 glasses of sour kvass or a pinch of citric acid,
salt,
ground black pepper,
bay leaf,
2 tablespoons chopped herbs,
½ cup sour cream.
For the noodles:
1 cup of flour,
½ glass of water,
2 eggs,
salt.
Preparation:
Cook the broth. Cut the roots into strips and sauté.
Boil the noodles and prepared mushrooms separately.
Cut the mushrooms into strips and fry in butter.
Pour the mushroom broth into the boiling broth, add the sautéed vegetables and cook for 10-15 minutes.
Then add fried mushrooms, homemade noodles and cook until done.
At the end of cooking, season with boiled sour kvass or diluted citric acid. Add salt, pepper, bay leaf, and thyme.
Making homemade noodles:
Beat eggs and salt diluted with water into flour.
Knead the dough until stiff, cover with a cloth for 20-30 minutes to make it easier to roll out.
Roll out the dough into a thin layer on a floured surface and leave to dry for 10-20 minutes.
Cut into 4-5 cm wide strips and slice into thin noodles.
Before serving, place the chicken meat on plates, pour in the soup, add sour cream and sprinkle with chopped herbs.
